- 12 oz cashews raw organic
- 3-4 lemons juiced
- 1 tsp salt
- Soak the cashews ideally at least 8 hours.
- Drain and rinse and put in a high-powered blender with fresh cold water just to cover the cashews. Blend on high for a minute or so until smooth and creamy. (You want a thick yogurt consistency)
- Add in Lemon Juice and salt and blend.
