Ingredients:

  • 3 sweet potatoes peeled and sliced in rounds
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup raisins or cranberries

Directions:

  • Preheat oven to 400 F.
  • Place potatoes in a 13x9-inch baking dish. Drizzle with oil. Sprinkle with salt, cinnamon, and raisins. Toss to coat.
  • Arrange potatoes in rows in baking dish and roast for 35-40 minutes or until tender and golden brown.
