Almond Cauliflower Crust Everything Pizza

Ingredients
CRUST
  • 1/2 head cauliflower (large)
  • 1 cup almond flour
  • 3 eggs
  • dash salt (optional)
VEGGIES & MEAT
  • 1/2 lb ground turkey organic dark meat
  • 1 tablespoon oregano fresh or dry
  • 1 teaspoon fennel seeds (optional)
  • 1 teaspoon garlic powder fresh or dry (optional)
  • 1/2 teaspoon crushed red pepper (optional ... spicy!)
  • salt & pepper to taste
  • 1/2 cup tomato sauce organic, no sugar added (8 tablespoons)
  • 1/2 cup zucchini or yellow squash (sliced or chopped)
  • 1/2 cup red onion (sliced or chopped)
  • 1/2 cup red bell pepper (sliced or chopped)
  • 4 oz almond cream cheese or almond ricotta
  • 1 oz basil fresh & chopped

Instructions
FOR CRUST
  1. Heat your oven to 400-425F.
  2. Line 2 sheet pans with parchment paper.
  3. Chop cauliflower into medium chunks and throw in a food processor. Chop until you have a cauliflower “meal” (a fluffy small granular consistency).
  4. Place cauliflower in a kitchen towel and ring out as much liquid as you can.
  5. In a medium to large bowl combine cauliflower meal with the almond flour, eggs, and dash of salt. It will be a thick wet consistency.
  6. Divide into 4 portions and using your hands, scoop one portion onto one half of the first sheet pan. Press the “dough” into a 5-6 inch round. You want it to be thick enough to hold up to your sauce and toppings so don’t press out too thin!
  7. Scoop the other “dough“ portions onto the other sheet pan halves and press into 5-6 inch rounds.
  8. Bake in the oven about 15 minutes until the edges are golden. Remove from the oven and allow to cool a couple of minutes and then flip to finish cooling. (You’ll spread your toppings on the golden side). Makes 4 Individual Pizzas.
VEGGIES & MEAT
  1. In a medium to large skillet, sauté the turkey with oregano, fennel, garlic, crushed red pepper, and salt & pepper to taste, to create a ground turkey Italian sausage. Let cool.
  2. Top each pizza crust with 2 tablespoons tomato sauce (too much sauce will make the crust soggy!)
  3. Scatter the tops of the pizza with your vegetables and ground turkey, and dollops of almond cream cheese.
  4. Bake in the oven still at 400-425F at least 10-15 minutes until the edges of the crust are dark brown and crunchy then remove from.
  5. Finish with fresh basil for garnish before serving. Cut, plate and enjoy!
