Ingredients:

MARINATED SALMON INGREDIENTS:

  • 1 clove garlic minced
  • 1 teaspoon cilantro minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon extra-virgin coconut oil
  • 2 tablespoons low-sodium vegetable broth
  • 4 4-6 ounce wild salmon filets skin off

SALAD INGREDIENTS:

  • 12 ounces organic mixed salad greens
  • 1/2 cup pomegranate seeds
  • 1/2 cup pepitas or pumpkin seeds, raw and unsalted
  • 1 cup carrots shredded or diced small
  • 1 cup cucumbers diced small

DRESSING INGREDIENTS:

  • 1/4 cup pomegranate juice organic, no-sugar-added
  • 3 tablespoons extra-virgin olive oil

Directions:

  • Preheat grill to medium. (Consider using a stove top grill for smaller portions.)
  • In medium to large dish, combine garlic, cilantro, cumin, paprika, salt, pepper, coconut oil and vegetable broth; add salmon and marinate. Set salmon aside to marinate until ready to cook.
  • Toss mixed greens, pomegranate seeds, pepitas, carrots and cucumbers and place on large serving platter or divide evenly between four salad bowls.
  • Serve the dressing lightly whisked on the side, or toss with the salad.
  • Grill salmon approximately 4 to 5 minutes per side, depending on the thickness of the filets, until they begin to flake easily.
  • Serve salmon over the salad and enjoy!
