Ingredients:

  • 1 cup cilantro packed
  • 1 cup extra-virgin olive oil
  • 1/8 teaspoon all-purpose seasoning

Directions:

  • Bring 1 quart of water to a boil. Dunk cilantro in hot water for about 5 seconds. Remove cilantro from water and rinse with cold water immediately (this is called blanching). Squeeze water from cilantro.
  • Place cilantro and olive oil in a blender. Blend until smooth.
  • Season with all-purpose seasoning mix.

Notes:

The oil keeps 1 week in the refrigerator or 3 months in the freezer.
