Ingredients:
- 2 tablespoons macadamia nut oil
- 2 celery stalks chopped
- 1 onion chopped
- 2 garlic cloves minced
- 4 cups no-salt-added chicken broth
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh sage chopped
- 1 tablespoon fresh thyme chopped
- 1 tablespoon fresh basil
- 3 sweet potatoes peeled and cubed
- 1 cup green beans chopped
- 1 cup zucchini chopped
- 2 cups white beans soaked overnight and cooked
- 2 pounds chicken cooked, boneless, diced
- sea salt to taste
Directions:
- Heat oil in a large pot over medium-high heat. Sauté celery, onion, and garlic for 3-5 minutes or until soft.
- Add broth. Bring to a boil.
- Add Italian seasoning, herbs, and sweet potatoes. Reduce heat and simmer for 20 minutes.
- Add green beans, zucchini, white beans, and chicken.
- Simmer 15 minutes. Add sea salt if desired.
- Ladle stew into bowls and serve hot.
