Ingredients:
- 3 sweet potatoes peeled and sliced in rounds
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup raisins or cranberries
Directions:
- Preheat oven to 400 F.
- Place potatoes in a 13x9-inch baking dish. Drizzle with oil. Sprinkle with salt, cinnamon, and raisins. Toss to coat.
- Arrange potatoes in rows in baking dish and roast for 35-40 minutes or until tender and golden brown.
