Ingredients:

  • 2 tablespoons macadamia nut oil
  • 2 celery stalks chopped
  • 1 onion chopped
  • 2 garlic cloves minced
  • 4 cups no-salt-added chicken broth
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh sage chopped
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh basil
  • 3 sweet potatoes peeled and cubed
  • 1 cup green beans chopped
  • 1 cup zucchini chopped
  • 2 cups white beans soaked overnight and cooked
  • 2 pounds chicken cooked, boneless, diced
  • sea salt to taste

Directions:

  • Heat oil in a large pot over medium-high heat. Sauté celery, onion, and garlic for 3-5 minutes or until soft.
  • Add broth. Bring to a boil.
  • Add Italian seasoning, herbs, and sweet potatoes. Reduce heat and simmer for 20 minutes.
  • Add green beans, zucchini, white beans, and chicken.
  • Simmer 15 minutes. Add sea salt if desired.
  • Ladle stew into bowls and serve hot.
