1/2cupgreen cabbageshredded
1/2cuppurple cabbageshredded
1cupprepackaged coleslaw mix instead of cabbage(optional)
1/4cupcarrot
1/2cupraw cashewschopped
1/2cupVeganaise®
1tablespoonapple cider vinegar
1/2packet stevia(optional)
1/2teaspoonallspice
1/8teaspooncinnamon
1/8teaspoonnutmeg
1teaspoonfresh oreganofinely chopped or 1/2 dried
1teaspoonfresh thymeor 1/2 dried
1/3teaspooncurry powder
1/4teaspoonReal Salt
1/4teaspoonpepper
1/4cupraw sunflower seeds
1/2cupdried cranberries
Directions:
Combine kale, cabbage, carrot, and nuts.
In a small mixing bowl, combine Vegenaise®, vinegar, stevia, herbs, and spices. Whisk until mixture is blended well.
Toss with salad mix.
Allow salad to refrigerate for 30 minutes prior to serving if possible, so flavors can “marry.”
Top with sunflower seeds and dried cranberries.
