Ingredients
  • 3 sweet potatoespeeled and sliced in rounds
  • 1tablespoon olive oil
  • 1/2teaspoon salt
  • 1teaspoon cinnamon
  • 1/2cup raisins or cranberries
Instructions
  1. Preheat oven to 400 F.
  2. Place potatoes in a 13×9-inch baking dish. Drizzle with oil. Sprinkle with salt, cinnamon, and raisins. Toss to coat.
  3. Arrange potatoes in rows in baking dish and roast for 35-40 minutes or until tender and golden brown.
