    Ingredients
    • 1tablespoon coconut oil
    • 1teaspoon garlicminced
    • 1tablespoon fresh oreganochopped (or teaspoon dried)
    • 1tablespoon fresh basilchopped (or teaspoon dried)
    • 1/2cup light coconut milk
    • 1teaspoon fresh lemon juice
    • 1/2teaspoon crushed red pepper flakes(optional)
    • 1pound raw large shrimppeeled and deveined
    Instructions
    1. In a skillet, heat coconut oil over medium heat.
    2. Add red pepper flakes. Cook for 1 minute.
    3. Add shrimp, and cook for 1 minute on both sides, just until they turn pink. Be careful not to overcook.
    4. Add garlic, oregano, and basil.
    5. Stir in coconut milk and lemon juice. Cook until slightly thickened, about 1 minute.
    6. Serve over favorite greens or Shirataki noodles.
    Recipe Notes

    Kids usually love this simple recipe and it tastes great alone or over Shirataki noodles. The coconut flavor is a fresh alternative to traditional scampi.
