Pomegranate Pepita Salad with Salmon

    Ingredients
    MARINATED SALMON INGREDIENTS:
    • 1clove garlicminced
    • 1teaspoon cilantrominced
    • 1/2teaspoon ground cumin
    • 1/2teaspoon paprika
    • 1/8teaspoon sea salt
    • 1/8teaspoon ground black pepper
    • 1teaspoon extra-virgin coconut oil
    • 2tablespoons low-sodium vegetable broth
    • 44-6 ounce wild salmon filetsskin off
    SALAD INGREDIENTS:
    • 12ounces organic mixed salad greens
    • 1/2cup pomegranate seeds
    • 1/2cup pepitasor pumpkin seeds, raw and unsalted
    • 1cup carrotsshredded or diced small
    • 1cup cucumbersdiced small
    DRESSING INGREDIENTS:
    • 1/4cup pomegranate juiceorganic, no-sugar-added
    • 3tablespoons extra-virgin olive oil
    Instructions
    1. Preheat grill to medium. (Consider using a stove top grill for smaller portions.)
    2. In medium to large dish, combine garlic, cilantro, cumin, paprika, salt, pepper, coconut oil and vegetable broth; add salmon and marinate. Set salmon aside to marinate until ready to cook.
    3. Toss mixed greens, pomegranate seeds, pepitas, carrots and cucumbers and place on large serving platter or divide evenly between four salad bowls.
    4. Serve the dressing lightly whisked on the side, or toss with the salad.
    5. Grill salmon approximately 4 to 5 minutes per side, depending on the thickness of the filets, until they begin to flake easily.
    6. Serve salmon over the salad and enjoy!
