Ingredients
  • 2tablespoons macadamia nut oil
  • 2 celery stalkschopped
  • 1 onionchopped
  • 2 garlic clovesminced
  • 4cups no-salt-added chicken broth
  • 1teaspoon Italian seasoning
  • 1tablespoon fresh sagechopped
  • 1tablespoon fresh thymechopped
  • 1tablespoon fresh basil
  • 3 sweet potatoespeeled and cubed
  • 1cup green beanschopped
  • 1cup zucchinichopped
  • 2cups white beanssoaked overnight and cooked
  • 2 pounds chickencooked, boneless, diced

Instructions
  1. Heat oil in a large pot over medium-high heat. Sauté celery, onion, and garlic for 3-5 minutes or until soft.
  2. Add broth. Bring to a boil.
  3. Add Italian seasoning, herbs, and sweet potatoes. Reduce heat and simmer for 20 minutes.
  4. Add green beans, zucchini, white beans, and chicken.
  5. Simmer 15 minutes. Add sea salt if desired.
  6. Ladle stew into bowls and serve hot.
