    Ingredients
    • 44 ounces each mahi mahi fillets
    • 1tablespoon macadamia nut oil
    • lemon pepper
    • Large romain/iceberg lettuce or Oroweat Multi-Grain Sandwich Thins® (only 100 calories)
    • 1cup fresh pineapplediced
    • 1/2cup red bell pepperdiced
    • 2tablespoons fresh cilantrominced
    • 2tablespoons shallotsminced
    • salt and pepper to taste
    Instructions
    Preparation for Mahi Mahi:
    1. Preheat the grill to medium-high heat.
    2. Brush fillets with oil and sprinkle with lemon pepper.
    3. Grill fillets for about 5 minutes per side or until mahi mahi flakes easily when tested with fork. Serve on romaine leaves or buns with pineapple salsa.
    Preparation for Pineapple Salsa:
    1. Mix pineapple, red bell pepper, cilantro, and shallots, and season with salt and pepper.
