Bright Minds Lamb Kabobs

    Ingredients
    • 8 wooden skewers(soaked in water 30 minutes prior)
    • 1lb ground lambgrass fed, organic
    • 1 zest from one lemon
    • 1tablespoons garlicfresh minced
    • 4tablespoons mintfresh minced
    • 2tablespoons dillfresh minced
    • 2tablespoons oreganofresh minced
    • 1/2teaspoon salt
    • 1teaspoon pepper
    • 1tablespoon pomegranate seedsfresh (optional)
    • 1tablespoon avocado oil(optional)
    Instructions
    1. Blend lamb, lemon zest, garlic, mint, dill, oregano, salt, pepper in a large bowl.
    2. Separate lamb mixture into 8 equal potions and form kabobs by molding and flattening mixture around the pre-soaked skewers.
    3. Refrigerate minimum of 30 minutes. These can be prepared overnight if desired. Make sure they are well sealed in a container.
    4. Preheat grill to high.
    5. Remove skewers from refrigerator and brush lightly with oil if desired.
    6. Grill kabobs until lightly charred on the outside. Turn only once, approximately 3 minutes each side.
    7. Garnish with pomegranate seeds. Serve with my Cashew Cream Tzatzki (see recipe link below).
